In this installment of Cooking Healthy in Indian Country, Meagen Baldy uses salmon caught and canned right at Hoopa to make a healthy salmon salad.
She also adds white Russian kale and Brussels sprouts to the salad. “Brussels sprouts are high in vitamins A, C and K,” she says. “Brussels sprouts are cabbage’s little cousin, they grow here this time of year in Hoopa.”
She also adds a little cauliflower, and some strawberry for some sweetness and color to the salad.
She explains how this salad is full of protein and omega-3.
